- Gently sprinkle the caramel over the entire surface of the custard. A layer that’s too thick will create caramel that’s too heavy and hard to crack, while an uneven layer will create burnt spots and others that aren’t caramelized.
- Make sure the custard is well chilled: before caramelizing, your crème brûlées should have spent at least 2 hours in the refrigerator. A custard that’s too warm could continue cooking from the torch’s heat. And then, goodbye melt-in-your-mouth texture!
How do you brûlée Crème Brûlée?
A kitchen torch is the most suitable tool for making Crème Brûlée. In just a few seconds, it can create perfect caramelization.
Preparation tips:

Using the oven broiler is probably the most accessible method.

- Let cool for 2 minutes so the caramel layer becomes thin and crackly.
